Happy Valentine’s Day! I hope you all are having a great week and will do something fun to celebrate Valentine’s Day on Friday, whether it’s going out to a nice restaurant or just relaxing with a delicious home-cooked meal. Joe and I are probably going to end up at our favorite coffeeshop, Cherrywood Coffeehouse, for some delicious cheeseburgers. 🙂
About a week ago we headed to Amy’s Ice Cream which is Joe’s all-time favorite dessert place in Austin. I already mentioned that I’m having Joe pick up some chocolate covered strawberries for me this week, but they also have a Chocoberry ice cream right now that is phenomenal. Sweet cream ice cream with chunks of yummy strawberries and dark chocolate. I’ve been dreaming about that ice cream ever since I had it and knew I had to make my own Paleo version at home.
It definitely hit the spot for my chocolate/strawberry craving (at least until Joe brings home my treats!). Chocolate and strawberries have always been a favorite of mine and I can’t believe it took me this long to think of making it into ice cream.
Also, if you haven’t noticed, Sweet Paleo got a makeover! What do you think? My wonderful husband revamped the whole site and I think it looks great. One addition that he thought of was to add a “Restaurant Review” section. Every time we try a new restaurant, specifically in Austin, I’ve mentioned it in posts. Well, we’ve decided to go one step further and give detailed reviews of restaurants we’ve tried, good or bad. Each post will be solely our opinion and we are not compensated in any way for doing reviews. Just for fun! My first one should be coming up this week or next.
Well, enjoy Valentine’s Day, grab your ice cream maker and make this for your sweetie…or just yourself, that’s fine too!
Strawberry Dark Chocolate Chunk Ice Cream
|Prep time||5 minutes|
|Cook time||25 minutes|
|Total time||30 minutes|
|Dietary||Gluten Free, Vegan, Vegetarian|
- 1 can coconut milk
- 3 tablespoons maple syrup or honey
- 1 1/2 teaspoon vanilla
- 1 cup chopped strawberries (fresh or thawed slightly if frozen)
- Dark chocolate (chopped, add however much you want, you could use chocolate chips as well)
|Combine coconut milk, maple syrup or honey, and vanilla in a blender. Blend on high until well combined.|
|Add mixture to ice cream maker and follow manufacturer's instructions. During the last 5 minutes, add in strawberries and dark chocolate chunks.|
|Place in container and in freezer. Allow to freeze for about 30 minutes before eating. Once it's been in the freezer longer, you will need to thaw the ice cream for about 30 minutes to soften. Enjoy!|
