These last few weeks have been absolutely crazy. Work has been super busy from finishing up projects to training someone to take over my role. Looking for houses has been exhausting. We put in an offer and had it accepted by a home we really love, however there are potentially some serious foundation issues, which we are still finalizing. We’ve been out looking at more but just haven’t found anything worth making another offer on. The housing market in Austin is seriously insane. I think some houses sell site unseen and homes get multiple offers within the first day or two of the listing. There are just too many people looking for homes and not enough homes for sale. Lots of prayers that we find something within the next few weeks otherwise we have to look into renting which we don’t want to do. On top of all that just trying to look for a new job, adjust to a new city, acclimate to the 100+ degree weather…it’s been interesting.
I also decided to start the 21 Day Sugar Detox again. (Joe thinks I’m crazy to be adding to the stress of our lives right now). I completed it at the end of March this year and decided that I needed to reset my body again. Since moving to Austin we’ve enjoyed our fair share of food and drinks. I have been thinking about doing it again for a while and I finally took the plunge last Monday. I’m pretty much through week one and have two to go. I feel pretty confident that I can do it…at least for now!
I almost feel that this time is a little easier because I was more prepared. As soon as I decided to do it, I started planning out my meals for the week and what I wanted to have on hand for snacks. We had some pretty good dinners last week if I do say so myself. Two of my highlights were chicken, bacon and pesto stacks on portabella mushrooms along with roasted rutabaga fries and a salad. We got a new grill last week and tried it out on some nice New York strip steaks with roasted carrots, grilled zucchini and sauteed spinach. Making good dinners makes the detox seem that much easier!
Now onto the recipe. I made this before starting the detox of course since it contains mango and other types of sugars. It’s a really tasty summer salad. I didn’t grill the chicken because at the time we didn’t have a grill, but I think that would make this recipe even tastier. Enjoy your sugar! 🙂
Sweet BBQ Chicken & Mango Salad

- 1/3 cup BBQ sauce (make sure it has Paleo-friendly ingredients or make your own)
- 2 tablespoons fresh orange juice
- 1 tablespoon spicy brown mustard
- 1 tablespoon red wine vinegar
- Salt and pepper
- 1lb chicken breasts (baked or grilled)
- Cherry tomatoes
- 1 mango (diced)
- 1 green bell pepper (thinly sliced)
- Spinach or other lettuce
|In a large bowl, whisk together the BBQ sauce, orange juice, mustard, vinegar, salt and pepper to taste.|
|Grill or bake the chicken as desired (brush some extra BBQ sauce on the chicken during the last few minutes of cooking).|
|To serve, layer salad greens with chicken, tomatoes, bell peppers and mango. Drizzle dressing on top and enjoy!|
