Sausage, Sweet Potato & Kale Hash

Chicken Sausage I found a really delicious chicken sausage at Trader Joe’s that doesn’t have any added sugar and is fully cooked. Their Smoked Apple Chardonnay chicken sausage inspired me to think of something different to make instead of just grilling them up like we usually do. I knew I wanted to incorporate sweet potatoes (of course!) and apples. After a little searching around the internet for some more inspiration I came up with this recipe. It was really great the next morning with a fried egg. Enjoy!

Sausage, Sweet Potato and Kale Hash

Sweet potatoes, apples and kale pair perfectly with delicious chicken sausage for a nutritious meal. Great the next day for breakfast with a fried egg.


  • 4 Small sweet potatoes (chopped)
  • 2 apples (chopped)
  • 1 package chicken sausages (sliced)
  • 1 garlic clove (minced)
  • 1 sprig fresh rosemary (minced)
  • 10oz kale
  • salt and pepper
  • coconut oil


Step 1
Heat coconut oil in a large pan on medium heat. Add sliced chicken sausages and cook until heated through and browned. Remove from heat and keep warm.
Step 2
Add more coconut oil to the pan if needed and add sweet potatoes. Cover and cook, stirring, until softened and cooked through (amount 10 minutes). Once sweet potatoes are mostly cooked through add in apples and cook until softened.
Step 3
To the sweet potatoes and apples, add in garlic, fresh rosemary, salt and pepper. If there is still room in the pan, add in the kale and wilt for a few minutes. If the pan is full (like mine was), heat more coconut oil in another pan and wilt kale or place kale in a covered microwave safe dish to wilt.
Step 4
Add sausage to the pan with the vegetables and stir all together. Enjoy!
