Banana Berry Smoothie

I promised a recipe last week and I had all intentions to post one. However, we visited The Woodlands, TX and I completely forgot my camera at home that had all my photos…so here it is, a little delayed. Since moving to Texas I have been obsessed with fruit smoothies. Probably has to do with the fact that it is hotter than you know what outside. I’ve been making them for breakfast or snacks during the day (since I work from home right now and can make a smoothie any time I want!).

My favorite combo right now is frozen bananas with fresh berries, unsweetened almond milk and a little almond butter. I usually don’t put ice in them because I don’t like icy smoothies but you could add as little or as much as you’d like.

Our visit to The Woodlands this past weekend was a ton of fun. I ate way too much food (I had quite a few sweet potato fries) and some delicious chocolate cake with cream cheese frosting at a wedding (totally not Paleo but very worth it). It was great spending time with family, friends and old co-workers. I couldn’t believe it had been a year since we moved from there to Omaha and now we are in Austin. I think I’ve about had it with being a gypsy for a while! 🙂

When we got back to Austin we picked up the pups and headed to the Farmer’s Market. Bought tons of great looking veggies, farm fresh eggs, chicken and burgers. I’m in a super cooking mood and am craving some good Paleo food after this weekend. We stopped at the food trailer park for lunch and grabbed some tasty food from Short Bus Subs. They literally serve sub sandwiches out of the side of a short bus. All the menu items are school-themed and delicious. They made me a salad instead of a sandwich (named The Principal) with ham, turkey, roast beef and bacon. Yum! I love when restaurants are accommodating to dietary requests instead of just looking at you like you are crazy.

Well go grab your blender and a straw for your smoothie…I might just go make one right now!

Banana Berry Smoothie

A delicious, creamy fruit smoothie. Great for breakfast or a snack.

Ingredients

  • 1 frozen banana
  • 1/2 cup blueberries (fresh or frozen)
  • 1/2 cup strawberries (fresh or frozen)
  • 1 tablespoon almond butter
  • 1/2-1 cup unsweetened almond or coconut milk (carton)
  • Ice (if needed)

Directions

Step 1
Add all ingredients to a blender and give it a whirl. If you use all frozen fruit you may need to add additional almond/coconut milk as needed. If you want it thicker, add more frozen fruit. If you want it a little more like liquid, use less.
