Bacon and Butternut Squash Egg Casserole

Butternut Squash Egg BakeI am officially obsessed with any kind of egg bake. It’s just so easy to clean out my fridge and throw leftover cooked veggies and meat into a bowl with eggs and spices, bake in a casserole dish and call it good! The combo of sweet butternut squash and salty bacon is delicious. Add in sundried tomatoes and spinach for a truly flavorful dish. Joe even highly complimented this recipe which means a lot coming from him.

For the past month or so Joe and I have been glued to the TV watching three seasons of Veronica Mars. For those of you who don’t know what this show is, it aired sometime around 2004-2006 and is a teen-detective type show starring Kristen Bell. I never watched it when it was originally on, but Joe started watching it on Amazon Prime and got me hooked. At first I made fun of him for watching this show, but once I saw about 20 minutes, I was addicted. We were gearing up for the Veronica Mars movie that just came out this weekend. We had tickets for Saturday and had to finish all of Season 3 in one week. I can say proudly (or shamefully) that we finished just in time for our movie Saturday afternoon. The movie was awesome and lived up to what we had thought and what the reviews said. If you haven’t seen it or even though about it, I highly recommend it. It probably makes more sense if you’ve actually watched the series, but I think it would be a good movie regardless.

Now that we are free of the Veronica Mars burden maybe we can do something else with our free time like take our pups for walks or get out into the world instead of¬†sitting on the couch¬†cramming as many episodes as possible in one night. We are on a much needed TV break for a while that’s for sure!

Butternut Squash Egg Bake

Bacon and Butternut Squash Egg Casserole

Ingredients

  • 1 cup butternut squash (roasted or boiled)
  • 1/4 cup sundried tomatoes (chopped)
  • 1 cup spinach (chopped)
  • 4-5 pieces bacon (cooked, chopped)
  • 10-12 eggs
  • Salt/pepper
  • Butter or coconut oil (for greasing the pan)
  • Basil, oregano and garlic powder (to taste)

Note

Sweet butternut squash and salty bacon are the perfect combination in this egg casserole. Throw in sundried tomatoes and spinach for a an over-the-top flavorful dish!

Directions

Step 1
Preheat oven to 375 degrees F. Grease a 13 x 9 glass baking dish with butter or coconut oil.
Step 2
Combine all ingredients except for butter or coconut oil in a large bowl and whisk well. Pour into prepared baking dish.
Step 3
Bake for 30-35 minutes or until center of casserole is firm. Let cool for about 5 minutes, cut and serve.
