Asparagus & Ham Frittata

While Joe and I were in Austin, I had two different frittatas  (check out the posts here and here) and was determined to make a recipe at home. I’ve always been scared to make one because for some reason taking a pan on the stove and putting it in the oven seemed hard. Really I’m not sure why. This was so easy to make and was a delicious dinner. It made for quick and easy breakfasts during the week as well.

You can experiment with whatever fillings you like. I’ve been having spring fever lately and was craving the freshness of asparagus paired with salty ham. Oh how I wish cooking spring foods would bring warmer weather!

Asparagus & Ham Frittata

Serves 4-5

Asparagus and ham are great together in this easy to prepare frittata. Great for a weekend breakfast or dinner.


  • 7 eggs
  • 1/2 cup asparagus (cut into two inch pieces)
  • 1/4 cup roasted bell peppers (diced)
  • 3 pieces ham (diced)
  • 1 cup baby kale
  • Handful arugula
  • Lemon juice
  • Olive oil
  • Salt & pepper


Step 1
Preheat oven to 350 degrees F. Microwave cut asparagus in a covered dish with a tablespoon of water for 1-2 minutes until soft. Let cool slightly.
Step 2
Heat oil in a medium to large ovenproof pan over medium heat for 2 minutes. While pan heats up, add eggs, cooked asparagus, roasted bell peppers, diced ham, baby kale, salt and pepper to a large bowl. Whisk until all ingredients are combined.
Step 3
Poor egg mixture evenly into the preheated pan and let sit for 10 minutes or until edges are set. Don't touch! Let the edges become nice and brown.
Step 4
Place pan into preheated oven and cook another 10-20 minutes or until completely cooked through.
Step 5
Serve with an arugula salad dressed with fresh lemon juice, olive oil, salt and pepper. Eat up!
